Pork Satay/SatГ© (Java)

A typical Southeast Asian dish, satay, also known as satГ©, has long ago crossed the borders of Asia. Let me offer you a recipe, which can give you a feel of Indonesia.

  • 1.5 pound (750 g) of pork
  • salt, black pepper, and turmeric
  • 3 onions
  • 2 tablespoons of olive oil
  • 1 teaspoon of flour
  • a pinch of sugar
  • the juice of two lemons
  • 2 tablespoons of cream

Chop the pork into small pieces and season it with the spices, and half of the lemon juice. Turmeric gives the meat its specific yellow color and unforgettable flavor. Thread the pieces on metal skewers or wooden sticks and grill them. Mind you, it’s important that you gather the sauce dripping from the skewers while you grill the pork.

Chop and stew the onions in the olive oil until golden in color. Add a teaspoon of flour, the sugar, the rest of the lemon juice, the sauce from the pork, and the cream. This sauce is essential! Boil it for a while and dip the grilled skewers into it.

Serve while still hot with boiled rice and optionally skewered grilled vegetables, to let your vegetarian friends share the pleasure. Don’t forget that vegetables take much less time to grill, and if you cook them together, vegetables usually overcook. I’m sure you’ll work it out pretty soon. Enjoy it!
