All-Time Favourite Healthy Vegetable Soup


Of course your mum would make this soup for you when you were eight and sick. Mums always make the best broth when you most need it, which lowers your temperature right away. What is valuable about vegetables is that they are easy to digest and take little energy, which is quite precious when you can’t afford to waste any.

Besides, you don’t need many products to cook a simple vegetarian soup:

  • 2 potatoes
  • 1 carrot
  • Cabbage
  • Green beans
  • Peas
  • Maize
  • 1/2 onion
  • Parsley, dill, celery

To start with, steam in a basket two middle-sized potatoes and one carrot. Add some cabbage, green beans, peas and maize. Top this vegetable picture with half a sliced onion. When you see steam coming out of the pot, turn the stove to a moderate heat and steam for 20 more minutes.

Just in case, the best indicator is the potato – when it is cooked, you can consider the dish ready too. Try it with a fork and watch out for the steam which can burn your hand. Take the lid away to let it cool and take the steam basket out. Peel the potatoes and place them together with the carrot and onion in the bullion.

Strain and mince the mixture in a food-processor adding a pinch of salt and 1 teaspoon of olive oil. Then pour the rest of the vegetables in too. As soon as you bring the broth to the boil, take it away. Serve seasoned with parsley, dill, or celery.
