Spring Spicy Soup


It’s time for the last soup of the vegetarian series. It is the easiest and definitely my favorite as it takes grits – one of my most-preferred vegetables. It takes little time, and the good news about it is that it takes no oil. If you prefer, you can add a dash of olive oil, but it is not an obligatory ingredient.

  • 2-4 chopped onions
  • 3-5 carrots
  • 3-4 tablespoons of grits
  • 3-5 potatoes
  • 3 tablespoons of whole wheat flour
  • 3 tablespoons of oat flakes
  • 2 bunches of dock
  • parsley, celery, some black pepper (optional)

Place 2-4 chopped onions in 3 liters of water, together with 3-5 carrots, also chopped and 3-4 tablespoons of grits. Bring this to the boil over a low heat. Add 3-5 potatoes diced into small cubes and sprinkle with 3 tablespoons of whole wheat flour. After they are done, add 3 tablespoons of oat flakes.

Before you take it from the stove, add some grated tomatoes. When you switch it off, add two bunches of dock, finely minced. You can easily season this dish with parsley, celery, some black pepper (optional).
