Spanish “Flamenco” – eggs with ham

Flamenco eggs give you enough power to dance one of the greatest dances in the world. Try and cook this dish to learn the secret of famous flamenco dancers.

Here is what you need:

  • 10 oz (300 g) of ham
  • 1 onion
  • 2 tablespoons of lard
  • ВЅ teaspoon of paprika
  • 3 tomatoes
  • a pinch of sugar
  • 1 cup of vegetable bullion
  • ВЅ cup of peas
  • 1 cup of cut green beans
  • 2 big potatoes
  • 3 chile peppers
  • 5 eggs

Dice half of the ham into tiny cubes and stew it with the finely chopped onion and the lard. Add the tomatoes cut into four and season with paprika and a pinch of sugar. In about 15 min., pour the bullion in.

Now you should have got a saucy stew. Dice the green beans and the potatoes, chop the peppers into small pieces, and add them together with the peas to the stew. If needs be, add some more bullion in order to pour on all the vegetables.

Boil them for half an hour or so, season with salt and black pepper and place the stew in a baking tray. Break 5 eggs on top leaving some space between them, where you can order the rest of the ham. Bake the dish in the oven for 10 minutes.
