Chicken soup with garlic and tomatoes

If New Zealand is too far for you to go, try and prepare this soup, which is a typical dish from New Zealand. It definitely does not remind one of the traditional chicken soup.

You will need the following products to cook it:

  • 1 chicken;
  • 1 onion;
  • 2 tablespoons of oil;
  • 2-3 cloves of garlic,
  • 150 grams of diced smoked bacon;
  • 3-4 tomatoes;
  • 2 cups of flour;
  • 4 cups of chicken bouillon.

Fry the finely diced onion in a saucepan, adding step by step the finely chopped cloves of garlic, the bacon, the peeled and chopped tomatoes and finally the flour. Don’t let it burn – if the tomatoes are saucy enough, they will help you a lot.

Pour the chicken bouillon in and when it starts boiling, put the chicken in too until it gets soft. Take the chicken out, remove the bones and cut it in thin strips. Put the strips back in the soup and leave it boiling for a while.

As an optional final touch, you can season it with a squirt of white wine. Serve the soup with dices of brown bread fried with basil and garlic.
