Pancakes with spinach
10 oz (300 g) spinach;
3 eggs;
1 teacup milk;
ВЅ teacup flour ;
salt and pepper.
- Cut the spinach in small pieces and wash it well. Mix it with salt in order to make it soft. If you use canned spinach there is no need to mix soften it.
- Beat 3 eggs and add 1 teacup milk in a bowl.
- Add the flour, salt and pepper to the eggs and mix well the mixture.
- Add the spinach and bake it as pancakes in a frying pan.
- Before serving, spread butter and cheese on the pancakes and roll them.
You can choose different types of cheese or add also cut ham for stuffing the pancakes and sprinkle parmigiano (Italian hard cheese) over the hot pancakes.
