Marinated Mackerel
Ingredients:
- 4 mackerels
- 4 tablespoons chopped marjoram
- 2 cloves of garlic
- 2 tablespoons olive oil
- 1 lime
- salt and pepper
Preparation:
Remove the scales of the mackerels, scraping them with the blunt side of a knife under running water. Gut the fish and wash it well.
Cut 4-5 diagonal slashes on each side of the fish with a sharp knife .
Put the fish in a shallow non metallic dish.
To prepare the marinate mix in a bowl the olive oil, the marjoram, the grated rind and the juice of a lime, garlic, salt and pepper.
Pour the mixture over the fish and leave it for 30 minutes in refrigerator.
Cook the mackerels under a preheated grill on each side for 5-6 min, brushing it with the rest of the marinate until golden.
Put the fish in a serving dish and pour on it the remaining marinate.
Cook’s tip: Serve the marinated mackerel with stewed potatoes and slices of lime.
