Neapolitan eggs with rice
You don’t have to go to Italy to try perfect Italian food. Let us bring
Italian cuisine to your home. What is more, let’s escape from the
pasta&pizza monopoly and take a journey down culinary lane, which takes us
to Naples. The home of pizza offers a great variety of other dishes too.
One of them is “Neapolitan eggs with rice”.
Here are the necessary products:
- 3 cups of rice
- 6 hard-boiled eggs
- 3 oz (80 g) of grated yellow-cheese / mozzarella / your favourite type of cheese
- fresh butter
- salt
- black pepper
- parsley as much as you like
Clear and wash the rice and boil it for 20 min. in 1 Р… cup of boiling
salty water. Boil or steam the eggs – make sure that they are hard-boiled
because we will need to cut them later. There are many ways to get
hard-boiled eggs – the easiest piece of advice is that it takes twice as
much as it does to get soft-cooked eggs.
Strain the rice and mix it with the cheese of your choice. Pour this into
a baking tray smeared with butter and dice some butter on top too. Place
the halved eggs on top. I always wonder how to put them – the cut side
facing up or down. It is completely up to your aesthetics and inclination
to experiment to choose the direction. Psychologists say that any such
choice is telling about your attitude to life, so you can use this dish to
think about yourself too.
Enough with psychology; don’t forget the magic ending: sprinkle some salt,
pepper and finely chopped parsley on top. Bake the dish in a heated oven
for a quarter of an hour and serve it as it is in the baking tray.
The first good news about this recipe is that you can alter the quantity
of the ingredients as much as you like; and the second is that it doesn’t
take too much fussing. The result of an hour of work is amazing and you
can never be wrong with it. Enjoy it!
