Ingredients for 4 portions:
8 big tomatoes;
1 onion;
9 oz (250 g) mushrooms;
1 loaf of bread ;
2 tablespoons rice;
3 tablespoons oil;
Salt;
Pepper;
Parsley.
Preparation:
- Cut the onion and stew it slightly in oil.
- Cut the mushrooms and boil them for 1-2 min in water.
- Add the mushrooms to the onion, add chopped parsley, salt and pepper.
- Add to the mixture crumbs of bread or rice.
- Make holes into the tomatoes to stuff them with the mixture.
- Put the tomatoes in baking dish and pour water.
- Bake the tomatoes till the rice is ready.
- You can put cheese on the tomatoes 2-5 minutes before taking out the dish from the oven.
Cook’s tip: You can choose instead of mushrooms sausages. Before serving you can sprinkle the tomatoes with grated Italian cheese (Parmigiano)
