Stuffed tomatoes with mushrooms

Ingredients for 4 portions:

8 big tomatoes;
1 onion;
9 oz (250 g) mushrooms;
1 loaf of bread ;
2 tablespoons rice;
3 tablespoons oil;


  1. Cut the onion and stew it slightly in oil.
  2. Cut the mushrooms and boil them for 1-2 min in water.
  3. Add the mushrooms to the onion, add chopped parsley, salt and pepper.
  4. Add to the mixture crumbs of bread or rice.
  5. Make holes into the tomatoes to stuff them with the mixture.
  6. Put the tomatoes in baking dish and pour water.
  7. Bake the tomatoes till the rice is ready.
  8. You can put cheese on the tomatoes 2-5 minutes before taking out the dish from the oven.

Cook’s tip: You can choose instead of mushrooms sausages. Before serving you can sprinkle the tomatoes with grated Italian cheese (Parmigiano)
