Mushrooms with blue cheese

Here is a fantastic suggestion for cocktail parties at home. It takes about an hour and very little effort. Besides, this universal dish suits the taste of both vegetarians and those who prefer meat.

Makes: 4 servings


  • 12 big champignons
  • 1-2 oz (50 g) of smoked bacon
  • 1-2 oz (50 g) of blue cheese
  • 1-2 tablespoons of cream
  • black pepper, ketchup
  • grated yellow cheese
  • oil, butter

Wash the champignons, take the stipes away and place them in an oiled baking tray. Chop the bacon into tiny pieces and stew it until it lets its own fat out. Dice the stipes and stew them in this fat. When they are done, take the pan away from the stovetop and add the ground black pepper and the cream. This is the blend to stuff the mushrooms with.

Stuff each of the champignons, grate some blue cheese on top of each, put a tiny piece of butter on top and bake them in a hot oven for about 15-20 minutes.

Use the ketchup to draw a contour of figures near the rim of shallow plates. Fill the circle in with grated yellow cheese, and place 3 mushrooms onto the cheese in each plate.
