Risotto con Fungi (Risotto with mushrooms)


Have you ever wondered how Italian women stoke the fire of love? Italian desserts is a good guess, but in order to keep a man’s love, try risotto – yet another traditional dish from the Apennines.

Here is what you need to make the traditional “risotto con fungi”:

  • 8-9 oz (250 g) of mushrooms
  • 1 scallion or Вј onion
  • 5 oz (150 g) of rice
  • 4-5 table spoons of white wine
  • 10-11 fl oz (300 ml) of chicken bullion
  • oil
  • 1 cup of cream
  • 2 tablespoons of cheese

Wash and chop the mushrooms and the scallion. Stew them in oil, adding the rice, wine and bullion one by one. Stew the dish for about 20 minutes, stirring once in a while. Five minutes before you take it away from the stovetop, add the cream and cheese. Easy, ha?

Tip: If you prefer, you can include grated carrots and peas to vary the recipe. Embellish each serving with slices of tomatoes, sprinkle some dill and parsley on top and serve with a bottle of sparkling Chardonnay. Enjoy Italy!
