African peanut soup


Peanuts are used in almost any African dish – from garnish to the popular peanut soups. Let me offer you one type of African peanut soup, which takes not more than 40 minutes and tastes superb. Although it contains chile peppers, this dish is child friendly.

Makes: 6 servings

  • 2 teaspoons of peanut oil
  • 1 teacup of finely chopped onion
  • 2 mortared cloves of garlic
  • ВЅ cup of diced mushrooms
  • Вј teaspoon of chopped chile peppers
  • ВЅ teaspoon of sweet paprika
  • ВЅ teaspoon of grated fresh ginger
  • 2 cups of bullion (chicken or vegetable)
  • 8-9 oz (250 g) of tomato sauce
  • ВЅ cup of mashed sweet potatoes / potato puree
  • Вј cup of peanut butter

First, heat the peanut butter in a frying pan at moderate temperature. Stew the onion and mushrooms in and add the peppers, paprika and ginger. Stew these for not more than a minute. Pour the tomato sauce and the bullion in and let the dish simmer for about 15 minutes.

When it is done, take it away from the stovetop, and let it cool down. Next, blend the stew in the food processor, add the mashed potatoes and the peanut oil, and blend for a little while more.
