Argentinean beef stew
When you see such a long list of products, the first thing that comes to mind can only be, “This Argentinean beef stew must be delicious!” And it really is! Here’s what you need:
- 2 pounds (1 kg) of beef
- 4 tablespoons of lard
- 2 medium-sized onions
- 3-4 peppers
- 3-4 tomatoes
- salt, black pepper, parsley, basil
- 1 glass of white wine
- 8 cups of vegetable bullion
- 4-5 potatoes
- the grains of 1 milky corn
- 2 zucchini
- 1 apple
- 1 pear
- 1 peach
- 1 cup of grapes
Estimated cooking time: an hour and a half
Dice the beef and stew it with 2 spoonfuls of lard until red in color. In another pot, fry 2 finely chopped onions, peppers and tomatoes (peeled and chopped into small pieces) with 2 tablespoons of lard.
This substance is quite saucy, so when most of the tomato sauce has boiled away, add the stewed beef, salt, black pepper, finely chopped parsley and a pinch of basil. You can season the dish with other spices like turmeric, ground paprika, thyme, or oregano. Pour the white wine and the bullion on and leave it to boil for an hour.
In an hour, add the potatoes and zucchini chopped into small pieces and the corn grains. Peel and dice the apple, pear and peach and add them to the stew together with the grapes. Boil the dish until the beef gets soft.
Serve while still hot, seasoning each bowl with a pinch of fresh parsley.
