Simple bean salad

Bean salad is one of the simplest and easiest salads one can think of – takes little time, little effort and provides you with lots of power. Here are the basic ingredients:

  • a cup of beans
  • 3-4 spring onions
  • 2 tablespoons of finely diced parsley, leaves of parsley
  • 2 eggs
  • black pepper, vinegar, oil
  • black olives
  • half a lemon

Soak the beans in cold water for 24 hours. Boil them in fresh water and strain them. Add the onions chopped into small pieces and the finely diced parsley. Boil the eggs, peel them carefully, dice them and add them to the beans.

Season the salad with black pepper, salt to suit your taste, 3 tablespoons of vinegar, and 3-4 tablespoons of oil. You can optionally add some tomato puree or mashed boiled tomatoes. Stir well and place it in a big plate. Embellish the salad with black olives, lemon slices and parsley leaves.
