Turkish Delight


Turkish Delight is a type of sweet known all over the world but despite its name, it is also produced in Bulgaria, Albania, Bosnia and Herzegovina, Greece, Cyprus and Romania. The basic ingredients are farina and sugar, but you can vary the rest of it.

For soft Turkish delight you need:

  • 1.5 pound (750 g) of sugar
  • 5 cups (1 Вј l) of water
  • 5 oz (150 g) of farina
  • the juice of one lemon

For hard Turkish Delight you need:

  • 1.5 pound (750 g) of sugar
  • 5 cups (1 Вј l) of water
  • 8-10 oz (250 g) of farina
  • the juice of one lemon

Take a pot and dissolve the sugar in the water. Dilute the farina in a cup of water and pour it gradually in the sugared water, stirring well. Place the mix on the stovetop and keep on stirring all the time. To check if it is ready, drop a teaspoon of the mix in a glass of water; if the ball remains in one piece, it is done. When the mix starts boiling, add up the lemon juice, and a bit before you take it away from the stove, add the aroma spices too.

Optionally, flavour with a teaspoon of vanilla or rose attar, which tints it in specific light pink. You can add up nuts, peanuts, hazelnuts, almonds, sun-dried apricot pits or other type of nuts.

Finally, pour the Turkish Delight in a tray smeared with butter or oil and when it cools down, cut it into square pieces and sift either powdered sugar or cocoa flour on top. Pin each piece with toothpicks and offer it as a delicious dessert to your family and friends.
