Creamy tomato soup

One of the healthiest vegetable is the tomato. It is very rich of vitamins and of Lycopene. Unlike other fruits and vegetables, where nutritional content such as vitamin C diminished upon cooking, processing of tomatoes increases the concentration of lycopene which means lower risk of cancer and skin aging. That is why, ladies, I have chosen to present you Creamy Tomato Soup. Delicious and healthy!


  • 3 tablespoons butter
  • 25 oz (700 g) ripe tomatoes
  • 30 fluid ounces (850 ml) hot vegetable stock
  • 2/3 cup milk or light cream
  • Вј cup ground almonds
  • 1 tablespoon sugar
  • 2 tablespoons shredded basil leaves
  • Salt and pepper


  1. Melt the butter in a large saucepan. Add the tomatoes and cook for 5 min until the skins start to wrinkle. Season to taste with salt and pepper.
  2. Add stock to the pan, bring to the boil, cover and simmer for 10 minutes.
  3. Under a preheated grill lightly toast the ground almonds until they are golden-brown. This will take 1-2 minutes.
  4. Remove the soup from the heat and blend the mixture to form a smooth consistency or mash the soup with potato masher.
  5. Pass the soup through a sieve to remove any tomato skin or pips.
  6. Place the soup in the pan and return to the heat. Stir in the milk or the cream, ground almonds and sugar. Warm the soup through and add shredded basil just before serving.

Serve the soup warm. You can add also thyme to the soup in order to have more specific taste. You can serve it also with breadcrumbs, toasted in the same way as the almonds, instead of the almonds.
